When I left the Caribbean to move to the south some of the food choices like
grits, chicken and waffles, and collard greens was not very appetizing to me.
It took a while for me to get accustomed to the South recipes but I am getting
there. When it came to cornbread it depends on the person making it. I not a
die hard fan of cornbread but create it in some of sort of dessert, I am a
Southern girl all the way :).
Kellogg's has a take on cornbread cupcakes I just added a twist by adding
grated cheddar cheese, and two tablespoons of corn to the batter. I also added
some mascarpone cheese to the frosting.
